Little Gem Salad

Ingredients:

  • 4 heads of little gem lettuce
  • 1 cup carrots, julienned
  • 1 cup cucumber, thinly sliced
  • 2 zucchini, thinly shaved on a mandoline
  • 1/2 cup radishes, thinly shaved on a mandoline
  • 1/2 cup fennel, thinly shaved on a mandoline
  • 1/2 cup Marie’s® Roasted Tomato with Parmesan & Basil Vinaigrette
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper, to taste

Directions:

Toss all ingredients, except for crumbed feta. Then top tossed salad with feta cheese.
